Ethyl propionate is a colourless liquid with low water solubility. It has a sweet and fruity flavour and is commonly used as a solvent and as a component of flavours. Ethyl propionate can react with a variety of organic compounds, including esterification, addition and oxidation.
Ethyl propionate is usually produced industrially by the esterification of acetone and alcohol. Esterification is the process of reacting a ketone with an alcohol to form an ester.
