Ethyl propionate is a colourless liquid with low water solubility. It has a sweet and fruity flavour and is commonly used as a solvent and as a component of flavours. Ethyl propionate can react with a variety of organic compounds, including esterification, addition and oxidation.
Ethyl propionate is usually produced industrially by the esterification of acetone and alcohol. Esterification is the process of reacting a ketone with an alcohol to form an ester.
Although ethyl propionate is toxic, it is relatively safe under normal conditions of use and storage. Ethyl propionate is flammable and should not be mixed with oxidising agents, strong acids or strong bases. If accidentally taken or inhaled, seek medical attention immediately.
